Zucchini Fritters

Ingredients:

1 big zucchini,(or two small)
1 egg 1 clove of garlic, minced
1/2 cup of chopped onion
1/3 teaspoon salt
1/2 teaspoon baking powder
1/3 cup all-purpose unbleached flour
1/4 cup of olive oil

Simple recipe but pleasant to the taste.
Main ingredients are zucchini, egg and flour. Good for a breakfast, appetizer, or even a snack.

Shred the zucchini in medium bowl, add salt.
Let it stand for 15-20 min and drain water from zucchini.

Stir in egg, garlic, and onion. Fold in flour and baking powder.
Mix it to get the consistency of a heavy whipping cream.

Heat the 1/4 of olive oil in the skillet to the medium heat.
With the  tablespoon drop batter onto the skillet, forming pancakes.

Cook on each side for about 2-3 minutes, until lightly browned.

Transfer fritters to the paper towel and cover with another paper towel to drain the excess of oil.
Repeat with remaining batter, until finish all.

Serve fritters with sour cream, ranch, or your favorit dressing.

Hi, my name is Olga.  I would like to welcome you to my site.

I created it first of all, to save my family’s recipes and then to share them with my friends and those who have tasted some Russian/Ukrainian food and liked it. But I also would like to introduce it to those who haven’t yet, but would like to.

I will try to keep my recipes simple, but there are few that might require more prep time or ingredients for preparation. You will also find some of my family’s favorite American recipes here and other international cuisines.
