This is another delicious traditional Russian food. Pelmeni can be served with or without the broth.
Whisk an egg with 1 cup of water and 1 tea spoon of salt.
Add the flour, mix it well forming a dough.
Bring the dough on the surface and knead it well with your hands or use a bread machine.
In separate bowl mix together ground beef and pork, chopped onion and salt (about 0.5-1 tea spoon)
Roll the dough thin, about 1/8 of an inch.
With a glass of cookie form cut out circles.
Place a tea spoon of a filling in the center of the circle.
Fold the circle in half and close the edges pressing firmly around.
At this stage you may freeze pelmeni. Lay them out on a tray, so they don’t touch each other. When they froze, put them in a plastic bag and store for several weeks. Cook before serving.
Option 1:
In a pot bring water to a boil and salt it to taste. Place the part of pelmeni into the water, carefully turning them so they don’t stick to each other or to the bottom of a pot, let them raise up. Cook for 10 minutes.
Drain pelmeni from the water and transfer to the plate. Serve with slices of butter, sprinkle with black pepper and some chives.
Option 2:
Add a bay leave and a basil to the water and cook pelmeni in it.
Serve pelmeni soup with slice of butter. Sprinkle with black pepper and diced dill.
