Salmon Fish Soup

Ingredients:

2 qt water
3 medium potatoes, cut in bite size chunks
1 1/2 onions
2 carrots
1 red pepper
3 potatoes, cut into small pieces
1 clove of garlic
1 stick of salary
1 bay leaf
1/2 cup of green onion or chives, chopped
3 tablespoons of olive oil

This soup is very easy to make, it takes little time and it tastes so good. Use salmon fish fillets with out bones and skin.

In the large saucepan bring to a boil water. Add fish, half onion, 1carrot, stick of salary, bay leaf and potato.
Let it simmer until potato and fish get cooked.  Take onion, salary and carrot out from the broth and discard them.
Get out fish, brake it into smaller pieces and return it back to the saucepan.

Meanwhile, in the skillet  with heated oil saute chopped remaining 1 onion, 1 carrot and red pepper for about 10 minutes.
Add garlic at the end and saute for another minute, just to let garlic release its fragrance.
Transfer vegetables to the saucepan. Season soup with salt and pepper. Simmer for few minutes more. Turn off the stove.

Take out the bay leaf before serving.
Serve hot, sprinkling with some chives or green onion.

I created it first of all, to save my family’s recipes and then to share them with my friends and those who have tasted some Russian/Ukrainian food and liked it. But I also would like to introduce it to those who haven’t yet, but would like to.

I will try to keep my recipes simple, but there are few that might require more prep time or ingredients for preparation. You will also find some of my family’s favorite American recipes here and other international cuisines.
