Russian Potato & Ham Salad (Olivie)

Servings: 6-8

Ingredients:

1 pound ham or pack of Franks
3 potatoes
5 hard boiled eggs
3 carrots
1/2 (15oz) can of sweet peas
1/2 half of fresh English cucumber
2-3 small pickles
1/2 cup of mayonnaise
1/2 cup of sour cream
1 pink lady apple (optional)
1/2 cup shredded cheese (optional)

This delicious Russian salad became a traditional dish almost in every home for every Holiday or celebration.
You can replace some ingredients in the recipe and it won’t go wrong. For example a ham can be replaced with sausages or cooked chicken meat. Even smoked sausage will bring a unique flavor.
Canned peas can be replaced with frozen peas, thawed in warm water and drained.

Cook potato and carrot in a boiling water for 20-30 min, or until cooked but firm.
Separately cook eggs for 12 minutes then cool them down in icy water.

Let vegetables and eggs cool down completely before cutting them.
Using a vegetable cutter,  dice all vegetables, eggs  and ham.

Combine all ingredients and peas in a bowl.
I also like to add one diced apple and 1/2 cup of shredded cheese (optional).

Add mayonaise, sour cream and gently mix all together.  Add salt to taste, if needed.

Hi, my name is Olga.  I would like to welcome you to my site.

I created it first of all, to save my family’s recipes and then to share them with my friends and those who have tasted some Russian/Ukrainian food and liked it. But I also would like to introduce it to those who haven’t yet, but would like to.

I will try to keep my recipes simple, but there are few that might require more prep time or ingredients for preparation. You will also find some of my family’s favorite American recipes here and other international cuisines.
