Potato Fritters

Ingredients:

5 potatoes peeled & shreded
1 egg
1/2 onion, chopped
1 clove of garlic, crushed
1/2 teaspoon salt
pinch of pepper
1/2 cup of olive oil

These delicious pancakes don’t need any flour. Just an egg, onion, garlic, peper and salt. They are very easy to make and can be served for a breakfast with any of your favorit sauces. They also will be a great addition to your green salad at lunch or diner time.

In a large bowl, peel and shred the potatoes.
Add salt and drain the excess liquid off.

Stir in chopped onion and minced garlic, add pepper and egg and mix all together.

Heat oil in the skillet over he medium-high heat. With the table spoon drop the potato mixture into the skillet, forming the cakes.

Cook for about 3 minutes on each side, until lightly brown.

Transfer pancakes on the plate between two layers of paper towel to drain the excess of oil.

Repeat with remaining potato mixture until all is used.
Keep pancakes warm in a low heated oven until serving time.

Serve hot with your favorit salad or just a ranch dressing or sour cream.

Hi, my name is Olga.  I would like to welcome you to my site.

I created it first of all, to save my family’s recipes and then to share them with my friends and those who have tasted some Russian/Ukrainian food and liked it. But I also would like to introduce it to those who haven’t yet, but would like to.

I will try to keep my recipes simple, but there are few that might require more prep time or ingredients for preparation. You will also find some of my family’s favorite American recipes here and other international cuisines.
