Pea-Lentil Soup

Ingredients:

1 pound smoked ham
4 potatoes cut in bite pieces
1 onion diced
1 carrot sliced in cilinders
1 cup dried split pea with lentil
2 cloves of garlic, minced
1 inch ginger, minced
1 cup cut kale
3 tablespoons of olive oil

I usually make this soup with split peas only, but for this recipe I mixed it with lentil. Both peas and lentil are high in fiber, they reduce risk of heart disease and stabilize blood sugar.

Rince peas and lentil and soak them in water for 2 hours, before cooking.

IMG_3580In the skillet, in couple table spoons of olive oil cook onion, carrot and ham. Add garlic and ginger at the end.

Bring water to a boil in the pot, transfer vegetables with ham to the pot and add potato.

Season with salt and cook on low heet until potato, pea and lentil are tender.

Add some kale at the end before turning the heat off.

The spoon of sour cream can be added when serving.
