Oladushki Recipe – Small Ukrainian Pancakes

2 cups of flour
1.5 cups of milk
1/4 cups of sugar
1 tablespoon of yeast
1/2 teaspoon of salt

These little pancakes are called by many names and were made back in the old Soviet Union by all, Russian, Ukrainian, Estonian and all other mothers. Some of the names for them are Oladushki, Oladyi, Piskantsy and many more.

This is a simple recipe that is most common and can also be made with raisins. You will need warm milk, flour, yeast, sugar and salt.

First heat up the milk. I just put it into the microwave for 1 to 1.5 minutes. This will make it hot but remember that you are adding sugar to it and yeast, which will cool it down.

Then after you add the sugar and yeast to the milk, mix it up with a spoon and break up any of the yeast clumps. Let it stand for 10 minutes to start the yeast.

Add the flour and salt to a mixing bowl and mix the dry ingredients together. Add the yeast mixture to the flour bowl and mix it all up well so there are no more clumps.

My oven has a “warm” setting. I let the oven warm up for about 2 minutes and then turn it off. This way the oven is warm inside. I place the bowl into the oven with a towel on it.

Let the bater raise for about 10 to 20 minutes.

Once it is double in size, pull it out and mix it up with a fork. It should now be a little rubbery when you mix it and pull up the fork from it.

Prepare to fry the oladushki by having a fork and a spoon. You will need a second utensil to scrape the batter off the form and then to spread it into a shape of a small pancake.

Add frying oil to a pan about 1/4 inch deep. Heat up the oil so its nice and hot but not too hot. You can test it my dropping a small drop of batter into it. It it starts frying with bubbles aroud the drop of batter, that means its ready.

After the oil is hot, I lower the heat to about 4 and monitor it so it doesn’t cool down and doesn’t get too hot.

Add about 5 small pancakes into the frying pan. They should be about 2.5 to 3 inches in diameter.

Once you see the edges start to brown, you can flip them over. Fry about 2 minutes on each side and flip them. After about 2 to 3 flips they should be ready.

I also added some raisins into the last half of the batter and made some with raisins.
