Macaroni and cottage cheese salad.

1 cup of macaroni or pasta
3 cups of water
1 cup of cottage cheese (drained)
2 eggs hard boiled
salt to taste
2-3 tbsp) unsalted melted butter

savory sauce, or sweet syrup – to your choice


I remember this macaroni salad from my childhood.

I usually prepare the cottage cheese ahead of time. I put it in the cheesecloth over the colander and leave it that way over night, to drain the excess of liquid out.

Cook macaroni or pasta in a 2 quart saucepan in a lightly salted water, for about 20 minutes or until tender, depending on the type of macaroni. The best way is to refer to the instruction on the package.

In small pan cook eggs for 12 minutes. Immediately transfer them into cold water. Let them cool completely, then peel and dice.


Drain cooked macaroni or pasta from water.

Melt the butter in microwave for 5-7 seconds and stir into macaroni.



In a serving bowl toss together macaroni, cottage cheese and eggs.


You can serve this dish with your favorite savory sauce.

Or you can make it sweet, adding some sugar and serve with sweet syrup as well.
