Korzinki Meringue Baskets Recipe

Ingredients:

Baskets Ingredients:
2 cups of flour
2 sticks (226g) of room temperature organic salted butter
5 egg yolks
4 tablespoons of sugar
1 teaspoon of vanilla
1 teaspoon of baking powder

Meringue Cream Ingredients:
5 egg whites
1 cup of sugar
1/2 cup of water
1 teaspoon of vanilla

Other Ingredients:
Fruit jam. You can use different ones if you like. The ones that are a little more sour taste best.

These little Meringue Baskets are very tasty. They are pretty popular for weddings and major celebrations. It is basically a cookie basket with fruit jam and meringue cream on top.

Some people are afraid of making them because the cream is a little complicated to make. In this recipe, I will show you how to take the complicated out of the process and make it easier to make.

You will need flour, egg yolks, room temperature organic salted butter, sugar, baking powder and vanilla to make the basket cookies. The popular recipes also tell you that you need to use basket forms but I just use the cupcake pan.

Preheat your oven to 400F degrees.

First thing you need to do is separate the eggs whites into a separate bowl and the yolks into another. Make sure not to get any yolk into the whites or the meringue will not whip.

Put the butter into a mixing bowl and add the sugar. Mix it all very well and then add the egg yolks. Mixx all of this together.

Now add the baking powder into the flour and mix it all together well. Pour the flour into the butter mixture and knead it until it has the feel and texture of play-dough.

Now pinch off about a 1.5 inch ball and place it into each of the cups in your cupcake pan and press them into the form to create baskets or bowls. In this photo I made the walls too thick, so make them about 50% thinner than what is in the photo.

Also press the bottom to be pretty thin but not too thin so you see the bottom. It will puff up and fill the basket so you don’t want to fill it so there is no space for the jam.

After your baskets are all formed, take a fork and make a bunch of holes in the bottom to prevent it from puffing up too much. Now if the oven is preheated, stick them in the oven for about 10-15 minutes. Watch them after 10 minutes and once they get nice and golden on the top, they are ready.

Meringue Cream

Let’s start with the meringue cream. You will need the egg whites, sugar, water and vanilla.

Pour the sugar and the water into a sauce pan and heat it up until it starts to bubble. Then lower the hear to about 75% so it continues to bubble. Mix and check the syrup for thickness often. It will take about 6 to 10 minutes of cooking to reach the necessary thickness.

To know if your syrup is ready, take a spoon of it and slowly pour it back into the pan. If you get a thin solid line of syrup without braking, it is thick enough. If it still breaks the stream and drips in sections it is not ready yet. It should take 6 to 10 minutes total to reach this consistancy.

While that is cooking, prepare the meringue.

To prepare the meringue, whip the egg whites in a bowl until you have stiff peaks.

Now, when you syrup is ready, pour it slowly into the meringue while you continue to whip/mix the syrup into the meringue. Add the vanilla at the end and mix it in well. When you have poured all of it in, the meringue should look shiny and stiff.

The Assembly

When your baskets are done, I just place the cooling rack on top of the cupcake pan and flip it over and then take the pan off. The baskets will just lay there cooling down for about 30 minutes or until completely cool.

When the baskets are completely cool, you can put a spoon of fruit jam into them. I like the strawbery and raspberry jam on mine.

To pipe the cream in top, you can use the fancy piping tools or if you happen to have a metal piping tip, you can just stick it inside a plastic bag and cut off the corner so you can poke the tip out of it. Then pill the bag with the cream and pipe it onto each basket.

Here is what we have. A beautiful meringue basket pastry that tastes amazing. If you can leave them in the refrigerator over night, the fruit jam will soak the bottom of the basket and make it even more tasty!
