Russian Farmer’s Cheese Pancakes (Syrniki) Recipe

Ingredients:

1 pound farmer’s cheese
2-3 table spoons of sugar
1 egg
1 tea spoon vanilla
1 table spoon of lemon zest
pinch of salt
1/2 cup golden or brown raisins
2-3 table spoons of all-purpose flour
olive oil for cooking
extra flour for coating

for serving:
some powdered sugar
some whipped cream or fruit jam

Syrniki are tender pancakes, made out of farmer’s cheese (tvorog). They are a traditional dessert in Russia and will make an excellent breakfast as well.

Mix together cheese, sugar, egg, vanilla and lemon zest.

Add raisins, then flour and gently work into soft dough.

Scoop a mixture with a table spoon  and form little balls.

Coat each ball in flour.

Flat each ball, making a patty.

Cook pancakes in the oil on the skillet on medium heat for four minutes on each side, or until golden-brown.

Remove pancakes from the skillet and place on apaper towel to absorb excess of oil.

Dust over with some powdered sugar and serve with whipped cream or fruit jam.

Hi, my name is Olga.  I would like to welcome you to my site.

I created it first of all, to save my family’s recipes and then to share them with my friends and those who have tasted some Russian/Ukrainian food and liked it. But I also would like to introduce it to those who haven’t yet, but would like to.
