This delicious dish can be made for any family occasion. Crepes are great with different kind of fillings or without the filling, with any sweet or savory sauces on top .
For the batter: whisk two eggs with salt and sugar in a large bowl. Stirring add milk, melted butter then flour, whisk it well or blend it until smooth.
Heat a skillet on medium-high. Slightly oil a hot skillet.
I usually use two frying pans to speed the process of cooking.
With a big spoon pour the batter onto the oiled skillet, turn it in your hands so batter will coat all surface of a skillet.
Cook it on one side for about 2 min, or until light brown.
With help of a spatula flip the crepe to the other side and cook for another 2 min. Transfer crepe to a plate and brush with melted butter.
For the filling: Combine cottage cheese with Spinach & Kale Yogurt Dip.
Put a table spoon of a filling on one of the crepes.
Fold it as an envelope, hiding the filling inside.
Repeat with the rest of crepes and the filling.
Serve crepes hot with your favorit salad dressing or sauce on top.
To warm up the crepes, return crepes to the buttered skillet, sprinkle over with table spoon of water, cover with the lid and warm it up at the low heat.
