Cottage Cheese & Apple Pancakes

1 cup cottage cheese
2 eggs
1/2 cup white sugar
1 apple shredded
1 teaspoon vanilla extract
1 pinch salt
3/4 teaspoon baking soda
1 cup sifted unbleached all-purpose flour
1 cup of olive oil for cooking

Cottage Cheese Pancakes

These pancakes made from cottage cheese and shredded apple.
And they are very delicious.


Beat eggs and sugar. Add cottage cheese, shredded apple, salt, baking soda, vanilla and sifted flour.
Mix all together well.


Heat 4 tablespoons of oil in the skillet over medium-high heat.
With the large spoonfuls drop batter onto the skillet, forming pancakes.


Cook on one side for about 2-3 minutes, or until the edges are starting to dry.


Flip over to the other side and cook another 2-3 minutes, until lightly browned.


Transfer pancakes to the plate, drain the excess of oil between two layers of paper towels.


Repeat with the remaining batter until all used.


Serve with whipping cream or fruit jam.
