Chicken Skewers Recipe – Russian Chicken Shashlik

Ingredients:

2lb. Chicken Thighs
1 Large Onion
1.5 Table-spoon of Salt
1 cup of White Vinegar

Chicken skewers are called Shashlik in Russian. Shashlik is normally made from pork or lamb, but it can also be made from chicken.

Today I will do a chicken skewers recipe that is most common in our house. This recipe is same for our pork skewers as well, minus the meat type. The marinade is simple but it tastes really good when it is done.

For this recipe you will need 2 lb. of chicken thighs, 1 large onion, 1 cup of white vinegar and 1.5 table spoon of salt.

Start with the chicken thighs. I like to cut the big parts of fat off. Then cut them into strips about 1.5″ – 2″ wide.

Cut the onion in half and slice it into thin strips.

Place the chicken and the onions into a bowl and then add the salt and the vinegar into it.

Mix it all together so the salt and vinegar gets on all parts of the chicken pieces.

Cover it with celaphane and put it into the refrigerator for 1 to 2 hours to marinade. If you can leave it over night, it will soak up the marinade even more and will taste better.

Now, you are ready to put the ckicken pieces onto the skewers. I have some nice long skewers from the local Russian store but you can find these skewers online. I like these because they are flat and keep the meat from flipping around.

Add about 5 pieces of chicken per skewer. Put them in the middle and leave just a little space between each.

I like to cook them on the grill. Some people have a special Shashlik grill called Mangal. I don’t have it so I just use the gas grill.

Preheat the grill to 400F+ degrees before you add the skewers inside. When it is ready, add the skewers in the middle of the grill and then cover the lid.

Cook for 5 minutes. Then flip the skewers.

If you have a grill like mine, the front of it has more heat than the back, so the pieces that are in the front always cook faster.

Cook for 3 minutes and then you will probably need to flip the front 2 skewers as they will be golden color already. continue to cook the rest for another 3 minutes and then flip the rest.

Keep a close eye on the front 2 skewers. They may be already done. Check the temperature inside the chicken. If it is over 75F inside, it is ready.

Keep cooking the rest for 3 minutes at a time and moving them towards the front where more heat is. Keep flipping them every 2-3 minutes.

They will want to burn on the front of the grill so keep checking and flipping until the inside temperature is 75F+.

Once they are done, you can leave them on the skewers and serve them that way or you can pull them off into a bowl and serve them in a bowl with some garnish on top, like parsley or shopped green onions.

We like to have shashlik with buckwheat, boiled potatoes, mashed potatoes, or other roasted root vegetables. A nice summer salad also goes well with this dish.
