Chicken Kotleti Recipe – Chicken Burgers

2 lb. of chicken breast or chicken thigh meat
1 onion
1 potato
3 table spoons of room temperature butter
1 teaspoon of salt
1/2 teaspoon of pepper
1 1/2 cups of bread crumbs

Kotleti are very popular in a Slavic household, but more often Kotleti are made with beef/pork. Chicken Kotleti are not as common normally. In our house however, they are. Here is a recipe of the ones I make often.

You will need some chicken breast, or chicken thigh meat, an onion, a potato, some butter, salt and pepper.

Also, I forgot to add into the photo, you’ll need some plain bread crumbs.

There are many ways to grind all the ingredients but I have a Bosch mixer that has a meat grinder attachment that I love.

Get the meat, potatoes and onions ground up and mixed together with the salt and pepper. Then also mix in the room temperature butter (it is optional).

Heat up some oil in a frying pan and then start making the Kotleti. Form a ball about 2 inches in diameter and place it into the bread crumbs. Roll it in the crumbs gently and then flatten it a little in your hand.

Then place them into a hot frying pan. Don’t flatten them too much. They should be about 1 inch thick. Keep the heat at about 1/3. The oil should bubble but not shoot.

Once you start seeing a little brown on the edges, after about 4 to 5 minutes, flip the Kotleti over. Keep the heat under control by turning it up a little and then turning it down again when it gets too hot. The oil should bubble but not explode and shoot everywhere.

After about 4 to 5 more minutes you can flip them again and check the internal temperature. Chicken meat needs to be at 165F inside to be done. If its not yet, flip and fry some more for a couple minutes. Then check again. Keep doing that until it reaches the 165F degree mark.

Mine turned out a little darker than I wanted, because the heat was too high. So control your heat better that I did.

Kotleti go really good with some mashed potatoes and a summer salad. I also make a very delicious in the Kotleti pan after I am done frying them. I will add that recipe soon.
