Fish Under Veggies Salad (Russian “Fish In The Coat “)

Ingredients:

4 potatoes
4 carrots
2 medium beets
4-5 hard boiled eggs
4 marinated herring fillets
1/2 cup of mayonaise

This is the “King” salad, very popular at any Holiday or family celebration in Russia. Made with layers of cooked vegetables.
The sweetness of beets in combination with lightly salted fish and other vegetables gives that delicious flavor to the salad.
Depending on your taste, some people like to add the layer of fresh chopped onion in between.

This recipe uses the marinaded herring fillets. Canned salted herring is good to use as well.

Cook potato and carrots separately from beets, otherwise beets will color all your vegetables. Check them for readiness carefully with the fork, don’t overcook. Take vegetables out from water and cool completely before cutting. Cook eggs for 12 minutes in water. Take eggs out and cool in icy cold water.

Shred all vegetables and eggs in separate bowl.

Place half of potato evenly spreading on a bigger plate. Dice two herring fillets and spread them over the potato.
Cover with the layer of carrot and then beets. Spread half of mayonaise over the vegetables, then sprinkle with half of eggs over the mayonaise.

Repeat all layers, starting with potato, herring fillets, carrot, beets, mayonaise. Leave eggs for the decoration.

Garnish top of the salad with remaining eggs.
