Beef Stew With Mushrooms

Ingredients:

2 pounds beef
1 (32oz) can beef broth (or hot water)
1 onion
1 carrot
1/2 red pepper
2 cloves of garlic
1 inch ginger root
1 tea spoon salt (or to taste)
1 bay leave
6 table spoons of oil

This recipe is very useful with any side-dish.
Serve it on top of the mashed potato, cooked rice, pasta or a buckwheat.
It will complement any of them.

Wash and clean the beef from any tendons or fat. Cut it in 1 to 1,5 inch size portions.

Heat the oil in the frying pan on medium-high to high heat and brown some meat from all sides around quickly. It is important that the meet won’t loose the moisture during cooking.

It is a good idea to cover meet with a grill during a cooking.
Repeat with remaining beef, adding some oil if needed.
Transfer preparad meet to a pot.

In the same skillet saute carrot, onion and red pepper, adding some oil, if needed .

Separately slightly brown mushrooms, add  garlic and let it releases the fragrance.

Transfer all prepared vegetables to the pot with meet. Add broth or water, just to cover the meat. Season with salt, black pepper, add the bay leave and simmer on the  low heat for about 1 to 1 1/2 hours, or until meat is tender. Add grated ginger at the end.

Remove the bay leave before serving.
Serve it hot with your favorit side dish.

I created it first of all, to save my family’s recipes and then to share them with my friends and those who have tasted some Russian/Ukrainian food and liked it. But I also would like to introduce it to those who haven’t yet, but would like to.

I will try to keep my recipes simple, but there are few that might require more prep time or ingredients for preparation. You will also find some of my family’s favorite American recipes here and other international cuisines.
