Eggplant Sandwich

Ingredients:

One big eggplant.
2 tomatoes
1/2 cup hard cheese, shredded
Salt, black pepper, garlic powder

Dressing:
1/2 cup mayoneise
1 clove garlic, crashed

There is so many possibilities for eggplant recipes. This is the easy one. Bake it and serve it with dressing and tomato, or use your own imagination and ideas.

Heat the oven at 350F degrees.
Wash eggplant and peel it in stripes.

Cut in 3/4 inch circles. Season with salt, and leave it for about 20 minutes, to let bitter juices run out.
Then sprinkle with black pepper and garlic powder.

Cover the baking sheet with the baking paper and grease it.
Put eggplant circles on the sheet and brush them with some oil on the top.
Bake for about 20-30 minutes, until golden and tender. Let it cool.

Transfer eggplants on the plater. Spread with mayonnaise dressing, sprinkle with cheese.

Put slice of tomato on the top, spread with mayonnaise and sprinkle with fresh dill.

You may want to add one more circle of eggplant, if desired.

DRESSING:
Crash one clove of garlic and mix it with the 1/2 cup of mayonnaise.

Hi, my name is Olga.  I would like to welcome you to my site.

I created it first of all, to save my family’s recipes and then to share them with my friends and those who have tasted some Russian/Ukrainian food and liked it. But I also would like to introduce it to those who haven’t yet, but would like to.
